What’s Cooking Wednesday – Black Bean Brownies

Neighbor Andrea Schultz has another recipe to share. Gluten free brownies made with black beans.

Black Bean Brownies (aka Stop or My Mom Will Toot!)

Black Bean Brownies via Andrea Schultz

Ingredients:
1 19 oz  can black beans, well rinsed and drained
3 large eggs
3 T vegetable or canola oil
¼ c cocoa powder
2/3 c sugar
1 t baking powder
¼ t salt
1 t vanilla extract
1 t instant espresso
1/4 c bittersweet chocolate chips

Instructions
:
Rinse and drain the black beans well.
Add all ingredients except for chocolate chips in blender.
(Note: You might want to blend the beans and run them through a seive first to make sure no big bits of bean skin remain.)
Blend until very smooth, pour into an 8 inch square baking pan which has been sprayed with non-stick spray, sprinkle with chocolate chips.
Bake at 350 for 30-32 minutes.
