Black Bean Brownies (aka Stop or My Mom Will Toot!)
Ingredients:
1 19 oz can black beans, well rinsed and drained
3 large eggs
3 T vegetable or canola oil
¼ c cocoa powder
2/3 c sugar
1 t baking powder
¼ t salt
1 t vanilla extract
1 t instant espresso
1/4 c bittersweet chocolate chips
Instructions:
Rinse and drain the black beans well.
Add all ingredients except for chocolate chips in blender.
(Note: You might want to blend the beans and run them through a seive first to make sure no big bits of bean skin remain.)
Blend until very smooth, pour into an 8 inch square baking pan which has been sprayed with non-stick spray, sprinkle with chocolate chips.
Bake at 350 for 30-32 minutes.
